In the 1920s and 30s, a wave of Lebanese immigrants arrived in Mexico and brought with them their cooking syles, including shawarma. Thin slices of lamb, stacked on a spike, and slow roasted. The cooked meat was shaved off, and served with sauces on a pita.
Over time, the dish was adopted to local flavors and ingredients. lamb was replaced with pork, tortillas replaced the pita, and Mexican flavors and ingredients added.ย
With a little time and the right tools, you can make this dish at home in either your off-set or pellet smoker.ย
