Al Pastor

Al Pastor

Fresh warm tortillas, spicy pork, melted cheese, grilled pineapple and creamy guacamole. The taste of a good taco al pastor can really make your mouth water.ย

Do you love Al Pastor? Well then thank the Middle East!ย

In the 1920s and 30s, a wave of Lebanese immigrants arrived in Mexico and brought with them their cooking syles, including shawarma. Thin slices of lamb, stacked on a spike, and slow roasted. The cooked meat was shaved off, and served with sauces on a pita.

Over time, the dish was adopted to local flavors and ingredients. lamb was replaced with pork, tortillas replaced the pita, and Mexican flavors and ingredients added.ย

With a little time and the right tools, you can make this dish at home in either your off-set or pellet smoker.ย

One of the best recipes I've found online is over at Hey Grill Hey. Here is the link https://heygrillhey.com/smoked-al-pastor/

To do this right, you will need a few supplies.ย

First off you need the trombo - the vertical spit Amazon Linkย

You also need achiote paste Amazon Link

Finally, to really make the presentation, a beautiful carving knife Amazon Link

If you make this, please let us know how it came out!
